Fresh Pasta and Sauce Products and Pricing
Nancy Pritchard began making pasta for farmers markets in 2003 while still teaching art full-time at a middle school in Loudoun County. Smith Meadows Kitchen is now a small company with 3 employees in addition to Nancy. Together they make close to 400 boxes of flat noodles, 200 boxes of hand-rolled & filled ravioli, 100 pints of home cooked tomato sauces and 100 cups of freshly made herb pestos. The fresh egg dough is made from organic oat flour, semolina from a local mill, organic unbleached flour, and Smith Meadows free range eggs. Combined, these ingredients give the pasta a uniquely light and buttery texture. Most of the cheeses, herbs, greens, and other vegetables that are used to flavor the flat noodles, fill the ravioli and make the sauces are from the local farmers markets. Each week there are plain noodles in fresh egg, and whole wheat & oat. In addition, there are two kinds of flavored pasta and two kinds of ravioli. The noodle and ravioli flavors change each week within a rotation of 12 flavors of noodles and 8 flavors of ravioli. Some of the most popular noodles include Rosemary Sage, Nutmeg Squash, Basil Garlic, Dill & Chive and Lemon Basil. The ravioli flavors include Blue Cheese Pecan, Sweet Potato, Mixed Greens, Apple Cheddar, Basil Pesto, Sun-Dried Tomato, Mushroom and Herbs de Provence. Sauces are made each Thursday in the kitchen. The flavors are seasonal with cream sauces being the most popular during the cold months. Fresh milk from Keswick Creamery, a local dairy in Pennsylvania, is used as a base for Mushroom Marsala, Sweet Italian Sausage Cream Sauce, Asparagus Cream Sauce and many other favorites. Tomato sauces and pestos are most popular in the summer and early fall. Basil Pesto made with Organic Genovese Basil and Extra Virgin Olive Oil is the summer favorite.Our vegetarian tomato sauces include Tomato Tarragon (a light sauce with a base of carrots and tomatoes), and Neopolitan Marinara (a thicker traditional southern Italian staple with oven roasted garlic and oregano). Bolognese is a hearty classic that sells all year round. With a base of Smith Meadows Ground Beef and Rosemary Pork Sausage, it is the top seller each week.
